Ingredients
3 cups paneer (cottage cheese) cubes
3 whole dry kashmiri red chilies , broken into pieces
1 tbsp coriander (dhania) seeds
2 tbsp oil
1 tsp cumin seeds (jeera)
1 cup capsicum strips
1 1/2 cups chopped tomatoes
salt to taste
Method
- Combine the red chilies and coriander seeds in a small broad non-stick pan.
- Dry roast on a slow flame for 1 minute. Keep aside to cool slightly.
- Blend in a mixer to a smooth fine powder and keep aside.
- Heat the oil in a non-stick kadhai.
- Add the cumin seeds.
- When the seeds crackle, add the capsicum strips and saute on a medium flame for 1 to 2 minutes.
- Add the prepared powder, tomatoes saute for a minute.
- Add salt and 2 tbsp of water, mix well and cook on medium flame for 2 to 3 minutes, while stirring occasionally.
- Add the paneer, mix gently and cook on medium flame for another 1 to 2 minutes, while stirring occasionally.
- Quick Paneer Sabzi is ready. Serve hot.

1 tsp kasoori methi
1/4 tsp turmeric powder (haldi)
1/4 tsp chilli powder
1/4 tsp garam masala
1 tsp oil
salt to taste
Method
- Heat the oil in a kadhai and add the cumin seeds.
- When the seeds crackle, add the green chilli and saute for 2 minutes.
- Add tomatoes and cook till they are mashed properly.
- Add the turmeric, chilli powder and garam masala powder, mix well and saute for 1 minute.
- Add the paneer and mix well.
- Add salt and kasoori methi and mix well.
- Serve hot with chapati.
