Bhavanagari Marcha

Maracha (Chilly) Special Resipes


1 cup bhavanagari chillies , cut into roundels
3/4 tsp oil
1/4 tsp asafoetida (hing)
a pinch turmeric powder (haldi)
1/4 tsp black salt (sanchal)
salt to taste
1/4 tsp coriander (dhania) seeds powder

MethodMaracha (Chilly) Special Resipes

  1. Heat the oil in a non-stick pan.
  2. Add asafoetida,bhavanagari chillies,turmeric powder,black salt and salt and mix well.
  3. Cook on a slow flame for 1-2 minutes, while stirring once in between.
  4. Add coriander seeds powder.
  5. Mix well.
  6. Cook on a slow flame for another minute.
  7. Serve hot.


Raiwala Marcha

Maracha (Chilly) Special Resipes


1/2 kg thick green chillies (bhavnagari green chillies)
3/4 cup black salt (sanchal)
3/4 cup mustard powder
1/2 tsp asafoetida (hing)
1 tsp turmeric powder (haldi)
2 tbsp lemon juice
2 tbsp oil


  1. Wash and dry the chilies thoroughly.
  2. Remove the tops and slit each chilly lengthwise. Tap to remove any excess seeds.
  3. Mix together the black salt, mustard powder, asafoetida, turmeric powder and oil.
  4. Fill this mixture into the chilies.
  5. Place them in a sterilized bottle. Top with any remaining mixture.
  6. Add the lemon juice and shake the bottle well.
  7. Store for at least 1 day before serving.

Stuffed Bhavnagri Chillies


5 bhavnagari chillies , split lengthwise and deseeded

For The Stuffing
1/8 cup yellow moong dal (split yellow gram)
1/2 tsp oil
1/8 tsp cumin seeds (jeera)
a pinch of asafoetida (hing)
3/8 tsp green chilli paste
a pinch of turmeric powder (haldi)
1/2 tbsp chopped coriander (dhania)
salt to taste

For The Tempering
1/4 tsp cumin seeds (jeera)
3/4 tsp oil

For the stuffingMaracha (Chilly) Special Resipes

  1. Half boil the yellow moong dal in enough water.Drain and keep aside.
  2. Heat the oil in a broad non-stick pan and add the cumin seeds and asafoetida.
  3. When the seeds crackle, add  green chilly paste and turmeric powder and saute on a medium flame for 1 to 2 minutes.
  4. Add the cooked moong dal, coriander and salt, mix well and cook on a medium flame for 3 minutes, while stirring occasionally.
  5. Cool slightly and keep aside.

How to proceed

  1. Divide the stuffing into 6 equal portions.
  2. Fill each chilly with a portion of the stuffing.
  3. Heat the oil in a non-stick pan and add the cumin seeds.
  4. When the seeds crackle, add the chilies and salt and saute on a medium flame for 5 minutes or till they turn brown in color from all the sides.
  5. Serve immediately.
